Recipe of cured ham and new potato sushi

  • Sliced Maison Loste cured Parma ham
  • New potatoes
  • Curry powder
  • 100g goat's cheese
  • 2 dessert spoons of olive oil
  • 1 tablespoon of mint and basil
  • 20cl lemon juice
  • 100g whipped crème fraîche

For the herby cream, mix the goat's cheese with the olive oil, lemon, mint, basil and the crème fraîche until smooth. Keep chilled.


Boil the potatoes in water for 25 to 30 minutes, then remove the skins. Put the curry powder on a small plate and quickly roll the potatoes in it ( a light touch is recommended).


Wrap the potato in a slice of wafer thin cured ham.


Finish with a decorative cocktail stick and repeat.


Note : Once you have finished prepping, it is best to store them somewhere dark, cool and well-ventilated.
